Below is a list of Healthy Recipes we love.
Southwestern Stew
3 Potatoes peeled and cut into chunks
1 10oz pkg Frozen Sweet Corn
2 Carrotts, peeled and cut into chunks
1 Onion, thinly sliced
2 cloves of Garlic, minced
1 12.5oz Jar Salsa
1 can Green Enchilada Sauce
2tsp Salt
1 1/2 tsp Cumin
1 tsp Chili Powder
1/2 tsp Pepper
3 Boneless Skinless Chicken Breasts (can also use Frozen Chicken Breasts)
2 cans Chicken Broth
1 can Chili Beans
Place Chicken Breasts in Slow Cooker and add in all ingredients. Cook on low for 8 hours or on high for 4 hours. Before serving, remove Chicken from Crock Pot and shred with a fork. Add back to Crock Pot and mix well. You can also add 4 6inch tortillas cut into strips, or the crunchy tortilla strips sold in the salad topping section of your grocery store.
Topping ideas: cilantro, cheese, sliced avocado, pico de gallo, etc.
Tuna and Sauteed Veggies
I got this Recipe from a good friend of mine.
Sautee
mushrooms, frozen green beans, and chopped Red and Orange Peppers, and
tomatoes in a non-stick skillet sprayed with non-stick spray. (Or
veggies of your choice). Once Veggies are done, add tuna. Cook a little
longer until Tuna heated thoroughly. Sprinkle lightly with cheese.
Super fast. Super Easy and Delicious.
*Can also use Canned Chicken Breast.

*Steam
fresh or frozen cauliflower until tender, but not mushy. Drain and let
cool. Once the Cauliflower is cooled completely, use a cheese grater
to grate the Cauliflower. You will need 1 cup of grated Cauliflower
(not packed).
*Mix in 1/4 cup of
EggBeaters, 1/2 tsp of Oregano, and 1/2 cup Low Moisture Part Skim
Mozzarella Cheese to the grated Cauliflower.
(For a simpler, and much easier method, add heaping cup of steamed cauliflower, egg beaters, seasoning, and cheese to magic bullet and puree.)

*Spread mixture onto a
cookie sheet sprayed generously with a Non-Stick Spray into a 10"or so
circle. Bake in a Pre-heated oven at 440 degrees until top is brown.
The edges will look slightly burnt.
*Remove
crust from oven, and top with 3 tablespoons of no-sugar-added pizza
sauce and 1/2 cup of Low Moisture Part Skim Mozzarella cheese. Add
additional toppings according to taste. examples: turkey pepperoni,
olives, peppers, mushrooms, onions, or diced tomatoes.
*Bake in oven until cheese is melted.

Buffalo Chicken Salad
2 cans Chicken Breast
1-2 tsp Reduced Fat Cream Cheese
Franks Redhot Wings Buffalo Sauce
1 can Rotel Tomatoes
Heat 2 cans of Chicken Breast, drained, in skillet.
Add Reduced Fat Cream Cheese,
1 can Rotel Tomatoes,
and Franks Redhot Wings Buffalo Sauce.
(according to taste. I did not measure the Franks sauce)
Once heated thoroughly, serve over a salad
with your favorite dressing.
Or you can wrap the chicken mixture
in lettuce leaves. Spicy, and yummy!
Makes 4 Servings.

"Taco Salad"
Lettuce of your choice
I usually use a large Bag
of *Cole Slaw Salad Mix
(Sams Club sells a huge bag for $2.99)

3 Cans Chicken Breast
1pkg. Taco Seasoning
(I like the Chicken Taco Seasoning)

Heat Chicken Breast in a large
skillet. Add Taco Seasonings and heat according to package
instructions. Serve Chicken Breast over Cole Slaw Salad Mix. Each
serving size is 2 cups of Salad Mix, and approx. 6oz Chicken Breast. I
add 2 tbsp of Lite Ranch dressing, and 1tbsp of Hot Sauce.
*Do not add Cole Slaw Salad Dressing to the Salad mixture.

Crockpot Chicken and Pepper Soup
1pkg Frozen Chicken Breast

2 Orange Bell Peppers sliced
1 Yellow Bell Pepper sliced
Cilantro (I LOVE cilantro, so used a lot)
6 cups of water
6 Chicken Bouillon Cubes
1pkg Chicken Taco Seasoning
2 8oz Cans of Tomato Sauce (or 16oz Rotel Tomatoes)
Place all ingredients in Crockpot and cook on low for 8 hours, or high for 4 hours. Remove Chicken from Crockpot and shred with a fork. Add Chicken back to Crockpot and mix well.

EggBeater Omelet
2 Cups Egg Beaters
Fresh Baby Spinach
Diced Peppers.
In a large skillet sautee spinach and peppers.
I used Red and Yellow Bell Peppers
in the photo above.
Usually I just use spinach,
skip the peppers.
Add 2 cups of EggBeaters and scamble.
Before serving sprinkle LIGHTLY with cheese.

Today my husband fixed Beef and Chicken Fajitas on the grill.
It smelled SO good!
I wanted a Fajitas SO BAD!
So I decided to make a fajita salad instead.
Recipe Follows:
6oz. Grilled Fajita Chicken Meat
(We buy the pre-seasoned packages)
Mushrooms, Onion, and Red and Green Bell Peppers
Grilled or Sauteed.
Cilantro (to taste)
Lettuce of your choice.
(I used Leaf Lettuce. I like it MUCH better than Iceberg Lettuce)
Light Dressing of your choice.
Mix all ingredients in a large bowl. Drizzle lightly with your favorite Light Dressing. Sprinkle LIGHTLY with cheese. This salad was SO GOOD!!!
